No Bake Cookies

An old family favorite

Mom always wanted to be the kind of mom that had fresh cookies waiting when her family came home at the end of the day. It was quite a fantasy and she may have even been wearing a Snow White reminiscent apron in her visions. However, in reality there is work, and homework, and afterschool activities, and volunteer work, and so many other obligations. However, these quick cookies make it easy to provide your family with a delicious snack. Woodland animals will not dance at your feet and birds will not land on your fingers but at least your family will be happy.

Ingredients:

2 cups sugar

¼ cup cocoa

½ cup milk

¼ pound butter

1 teaspoon vanilla

½ cup peanut butter or sun butter

2 cups quick cook oatmeal (grandma’s recipe says rolled oats)

Directions:

Combine sugar, cocoa, milk, and butter in a heavy pan. Cook until it comes to a boil. Boil 2 minutes and remove from heat.

Add vanilla, peanut butter and oatmeal. Mix well. Drop onto wax paper. Let dry until hard, about 15 minutes.

Makes 48 cookies.
