RECIPE: Instant Pot Caribbean Chicken

It has a mild flavor so it is perfect for kids but it takes us back to our time in the Bahamas and the flavors that we enjoy there.

Ingredients

12 oz. pineapple juice

1 Tablespoon Caribbean Traditions Chicken Seasoning plus more to sprinkle

1 Tablespoon chopped garlic

6 chicken drumsticks or chicken thighs

Directions

1. Mix juice, 1 Tablespoon seasoning, and garlic in bowl. 
2. Add chicken and marinate 30 minutes.
3. Pour chicken and marinade into Instant Pot.
4. Sprinkle chicken with seasoning.
5. Close lid; set pot to poultry or 16 minutes high pressure.
6. When done, vent on quick release.
7. Open carefully.
8. Serve with rice and enjoy.
