RECIPE: Easy Cole Slaw

A summer staple with little effort

Our produce basket came with a head of cabbage this week. It was not a giant one but a cute little one that was the perfect size for our trio. Mom debated over what to make with it. Stuffed cabbage, cabbage soup, and cabbage and noodles are among the Mac family favorites. However, we decided to make one of our favorite summer dishes. The prep was quick and easy and then it waited until we were ready to enjoy it. We made a very basic recipe because we were serving it with spicy Italian sausage sandwiches. They were the perfect contrasts to each other.  However, if we were having something more mild like grilled chicken, additions of carrots and craisins would make a fun side dish.

Ingredients

1 head cabbage

½ cup mayonnaise

1 tablespoon apple cider vinegar

¼ teaspoon celery salt

2 teaspoons sugar

2 dashes garlic powder


Directions

  1. Shred cabbage, place in a big bowl and set aside.
  2. Combine mayo, vinegar, celery salt, sugar, and garlic powder.
  3. Pour mixture over cabbage and mix well.
  4. Refrigerate at least 2 hours.
