RECIPE: Quick Mini-Apple Pies

Cure your apple pie craving in less than 30 minutes

Every day for weeks, Mac Kid asked if Mom would bake her an apple pie. For weeks mom said no: it is too hot, we are too busy, we don’t have enough apples. One day the kid brought her an apple and asked why we couldn’t make pie with that apple. Mom opened the fridge, saw a tube of crescent rolls, and came up with a plan. In the end, we had just enough pie to satisfy the craving and armed with a quick recipe the next time the craving hits.

Ingredients:

1 apple

1 tube refrigerator crescent rolls

1 tablespoon flour

1 tablespoon sugar

½ teaspoon cinnamon

2 dashes nutmeg

Sugar to sprinkle


Directions:

1. Heat over to 350 F

2. Slice and peel apple into mixing bowl

3. Add flour, sugar, cinnamon, and nutmeg

4. Stir

5. Open tube of crescent rolls

6.These can be made in a mini-pie pan or muffin tins. If you are using pie tins, use three triangles of dough and two for muffin tins. Take the needed amount of dough and smoosh it into a ball.

7. Roll out the dough to the size of the inside of the baking tin. Line tin with dough.

8. Fill dough with enough apple mixture to reach the top of the dough.

9. Lay out two more crescent roll triangles and cut with mini cookie cutters. You can cut into hearts or other shapes with a knife if you don’t have mini cutters.

10. Place shapes over apples.

11. Sprinkle top with sugar.

12. Place tins on baking sheet.

13. Bake 20 minutes.

14. Serve slightly cooled but still warm with ice cream or whipped cream.
