RECIPE: Peachy Keen Fish

Our Mac Kid has been on a vinegar kick. She enjoys anything with a little (or a lot) of vinegar on it. She doesn’t usually care for fish so I invented peachy keen fish and she ate every bite. We used vanilla bean peach preserves that we canned last fall but you can use any kind of peach preserves that you have available. We used cod but other types of fish like tilapia or even salmon would be yummy too. Just adjust your cooking time.

Ingredients:

4 4oz servings of fish

¼ cup peach preserves

1 tablespoon apple cider vinegar

1 teaspoon dried tarragon

  1. Pre-heat oven to broil.
  2. Line a baking sheet with foil and spray with non-stick spray.
  3. Place fish on baking sheet.
  4. Broil fish 3-4 minutes on each side until internal temperature reaches 145 F.
  5. While fish is in the oven, mix preserves, tarragon, and vinegar.
  6. When fish is cooked remove from oven and then spread peach mixture evenly over fish.
  7. Return to oven for one minute.

That’s it! You can make a simple delicious meal in under 10 minutes that the whole family will enjoy.
